Recipe: Coconut Banana Chocolate Chip Pancakes

Have you ever woke up in the morning to find yourself having a taste for something new, something different to go with that hot cup of coffee? You might typically have a bowl of cereal or a healthy bowl of oatmeal because of time constraints. Or if time is not the problem, you might veer off the normal path for some French toast. Usually when the subject of pancakes comes up, our first thought is the local pancake house. Why not experiment on your own, and fix yourself up a stack of tasty Coconut Banana Chocolate Chip Pancakes?

Here are the key ingredients you will need:

  • 4 Eggs
  • 6 TBSP Coconut flour
  • 6 TBSP Coconut milk (canned, so you’re getting all of the coconut fat)
  • 2 TBSP Coconut oil (melted)
  • 1 Banana (mashed)
  • 1/2 tsp. Baking soda
  • 1/2 tsp. Apple cider vinegar
  • 1/2 tsp. Vanilla
  • 1/4 cup Chocolate chips

Instructions:

The first thing you want to do is mix together the banana, eggs, vanilla, and coconut milk. After a thorough whip, add the coconut oil and mix well. You then want to incorporate the coconut flour. Be sure to whip thoroughly so the mix is not lumpy. Now stir in the apple cider vinegar and baking soda, followed by the chocolate chips.
Preheat a skillet over medium-low heat. Grease with cooking oil spray or 1 tsp. coconut oil. Use about 1/4 cup batter for each pancake.
Cook the pancakes for 3 minutes, or until bubbles appear on the surface. Flip, and cook for 1 ½ – 2 minutes on the other side. Adjust cooking temperature as needed. Repeat with the remaining batter, greasing the pan each time.
Top with your favorite syrup, honey, sugar, fruit, or chocolate and enjoy!

Note:
